Poached Salmon Recipe

YOU WILL NEED:

4 Salmon Fillets
4 Tablespoons Lemon Juice
2 Tablespoons Butter
1/2 Cup Onions - Chopped
1/2 Cup Celery - Chopped
1/2 Cup Dry White Wine
Salt - To Taste
Black Pepper - To Taste
Lemon Pepper - To Taste
2 Cups Water
1 Tablespoon Dill

METHOD:

1. Marinate cleaned Salmon fillets in lemon juice and black pepper. (Preferably for 30 minutes).
2. In a large skillet, add butter and saute the onions, then the celery for 5 minutes.
3. Add wine, water, salt, pepper and lemon pepper to this skillet. Simmer for 2 minutes.
4. Add the marinated Salmon to this boiling liquid, cover and poach for 12-15 minutes. (Do not overcook salmon or it will be too dry. Fish should flake apart easily when prodded with a fork).
5. Remove salmon, sprinkle dill on top and serve hot with a side of mashed potatoes, and grilled asparagus with Hollandaise sauce (or tartar sauce or any sauce of your choice) drizzled over the Salmon.

I didn't have lemon pepper so I squeezed fresh lemon juice into the skillet instead. Was tasty! I also followed your directions and served with grilled asparagus and Hollandaise sauce. We loved this dish!

Great taste with the dill. Wine was a good touch too. Did not have lemon pepper so I also used fresh lemon instead.
