This is an all-time Asian favorite! A quick and delicious meal idea...
YOU WILL NEED:
4 White Fish Fillets (Catfish or Tilapia) - Cut into 2" Squares
1/2 Fresh Red Bell Pepper - Cubed
1 Red Onion - Cubed
1 Stem Fresh Green Onion - Sliced Finely
7-8 Flakes Fresh Garlic - Finely Chopped
2 Tbsp Black Bean Garlic Sauce
4 Tbsp Oyster Sauce
1 Cup Chicken Stock
1 Teaspoon Low Sodium Soy Sauce
1 Tbsp Corn Starch
2 Tbsp Rice Wine Vinegar
1-2 Tbsp Sesame Oil
1/4 Teaspoon Sugar
Black Pepper (Pinch)
Salt (* The Sauces already contain a lot of Sodium so you may not need to add any salt)
METHOD:
1. Rinse & Marinate Fish Fillets in Garlic, a pinch of Black Pepper, Rice Wine Vinegar and some of the soy sauce for 15 minutes.
2. Prepare sauce mixture: In a bowl, combine remainder of soy sauce, black bean garlic sauce, oyster sauce, sugar and a little water. Mix well. (Option: If you like spice, you can also add Chilly Oil to sauce).
3. Add Oil to pan.
4. Add Onions & Bell Peppers to pan. Saute for 3-4 minutes.
5. Remove from pan & set aside the sauteed vegetables.
6. In same pan, add fish fillets & saute until done. About 10-12 minutes.
7. Add sauteed vegetables back into pan with fish. Add sauce mixture & chicken stock. Let cook for a couple of minutes.
8. In a small bowl, mix corn starch and little water. Add to fish & vegetables.
9. Mix in gently until sauce thickens. Sprinkle with few green onions on top & serve immediately with steamed rice. Enjoy!

Delicious. Tried it. Only I put too much salt this first time - next time I will put less. Other than that, this was yum.
