Tandoori Fish Frankie Wraps Recipe

This appetizer is sure to impress your guests! Low in fat and tasty, these tandoori fish wraps look like you just ordered them from a gourmet restaurant...

YOU WILL NEED:

4 White Fish Fillets - (Catfish or Tilapia) Cut into large bite size pieces
Red Onions - 1 - Chopped
Tomatoes - 1 - Chopped
Cilantro - 1 Bunch Finely Chopped
Tandoori Paste - To Taste
Curry Powder or Curry Paste - To Taste
Cumin Powder - 1/2 Teaspoon
Ginger - Finely Chopped 1 tsp
Garlic - Finely Chopped 1 tsp
Low Fat Yogurt - 4 Tablespoons
Naan Bread or Flat Bread from Trader Joes or Parathas
Red Chilli Powder - To Taste - Optional
Lemon Juice
Green Chutney or Salsa - Optional
Canola Oil - 1-2 Tbsp
Black Pepper - To Taste
Salt - To Taste (use very little since tandoori paste may already contain salt)

METHOD:

1. Wash and marinate fish in lemon juice, black pepper, cumin powder, tandoori paste, yogurt, ginger and garlic for 1 hour or longer.
2. Add oil to pan. When hot, saute onions then tomatoes and cilantro. Add salt, curry paste or curry powder.
3. In a different pan, add oil, then add the marinated fish and lightly saute, making sure not to break the pieces. Cover and steam the tandoori fish until done. Should be no more than 10-12 minutes. Do not overcook fish, or it will become dry. The tandoori fish should be moist and juicy.
4. Heat up the flat bread or parathas.
5. Place curried onion mixture in center of parathas and spread it out evenly.
6. Gently place tandoori fish in a row in the center of parathas, over the onion mixture.
7. Wrap these fish frankies into a roll. Place toothpick to hold fish frankies in place.
8. Serve hot with green chutneys or salsa.
