A healthy, sumptuous salad that looks great and is heart healthy...
YOU WILL NEED:
1/2 Head Kale Salad Leaves - Finely Chopped (Remove stems)
1 Cup Butter Lettuce Leaves - Finely Chopped
1/4 Cup Shredded Carrots
1 Cup Cucumber - Peeled & Cut Into Cubes
1/2 Red Bell Pepper - Cut Into Short Thin Strips
1/4 Cup Organic Dried Red Cranberries or Raisins (Optional)
1 Tablespoon Toasted Sesame Seeds
1/2 Cup Sesame Vinaigrette Dressing
Pinch Lemon Pepper
METHOD:
1. Mix all salad ingredients together in a large salad bowl, except the dressing, sesame seeds and lemon pepper.
2. Then toss in the sesame seeds, lemon pepper and then the dressing. Mix well.
3. Let the salad marinate in the dressing in the fridge for approximately 15-30 minutes. Kale can be bitter, so it needs to marinate well in the salad dressing in order to absorb the flavor of the salad dressing.
4. Serve chilled.
