This mango bread recipe is simple yet delicious and is great when served with afternoon high tea.
INGREDIENTS:
1/2 Cup Whole Wheat Flour
1/2 Cup FINE Semolina Flour
2 Tbsp Dry Milk Powder
1 Tsp Baking Powder
1/2 Tsp Baking Soda
1/4 Cup Maple Syrup (Grade A)
2 Cups Haagen-Dazs Frozen Mango Sorbet
1/2 Cup Melted Butter
2 Tbsp Sour Cream
RECIPE:
1. Preheat oven to 360 degrees F.
2. Mix in all dry ingredients in a large mixing bowl.
3. Defrost or let the frozen mango sorbet melt a little until it becomes runny.
4. In same mixing bowl, gently stir in all the liquid ingredients with the dry ingredients.
5. Make sure the mixture is smooth and creamy and has no lumps.
6. Lightly grease a baking pan with butter or cooking spray. (Butter will taste better).
7. Add mixture into baking pan and bake in oven for 25 minutes until golden brown.
8. Insert a toothpick into the center to make sure the mango bread is cooked thoroughly. Toothpick should come out clean.
* TIP: If mangoes are in season, you may even puree fresh mangoes and use instead of the mango sorbet.
