Shahi Paneer Recipe

Shahi Paneer is a rich Indian recipe that originates from Northern India in the royal Mughal courts. It is a delicious concoction of mild spices, white almond gravy and cream.

YOU WILL NEED:

2 Cups Fresh Paneer Cubes (Ricotta Cheese)
1/2 Cup Raw Almonds - Skin Peeled
4 Cups Water
1-2 Tbsp Canola Oil
1 Bay Leaf
1 Cinnamon Stick
1 Full Cardamom (Elaichi)
2 Cloves
2 Star Anise
1 Teaspoon Shahi Jeera (Black Jeera)
1 Yellow Onion - Chopped Finely
1" Fresh Ginger - Finely Chopped
7-8 Pods Fresh Garlic - Finely Chopped
1 Teaspoon Coriander Powder (Dhaniya)
1/2 Teaspoon Jeera Powder
1/4 Teaspoon Garam Masala
Pinch Black Pepper
1/4 Cup Chopped Fresh Cilantro
Green Chillies - To Taste
Sea Salt - To Taste
1/4 Cup Fresh Cream (Optional)

METHOD

1. In a powerful blender (e.g Blendtec), add peeled almonds and water. Grind to a smooth gravy.
2. In a medium hot pan, add oil, bay leaf, cinnamon stick, star anise, cardamom and cloves.
3. Then add shahi jeera and saute for 2-3 minutes.
4. Add chopped onions and saute until golden. (Do not brown onions).
5. Add chopped ginger and garlic, saute for a minute.
6. Add black pepper powder, coriander powder, jeera powder and salt. Add a little water so the masalas do not burn. Saute for a minute only.
7. Add almond gravy/paste, add more water if necessary so gravy is not too thick.
8. On medium heat, keep stirring and bring to boil.
9. Cook this gravy for 30 minutes, keep stirring every few minutes so it does not burn from the bottom.
10. Once this gravy has thickened and becomes creamy, add the paneer and sprinkle the garam masala on top. Mix well and bring to a boil one more time.
11. Add cream if desired. (Optional).
12. Mix well, sprinkle chopped cilantro on top and serve with hot garlic naan or rotis.

TIP:
* You can also add kasoori methi to your dish after adding the ginger and garlic for a more authentic flavor. Methi is known to be good for reducing cholesterol.
